Pepper-Pineapple Chicken Recipe: How to Make It

Ingredients (2 Servings)

  • 1 onion, cut into wedges 
  • 1 red bell pepper, chopped 
  • 2 boneless, skinless chicken breasts 
  • 1/2 tsp garlic powder 
  • 1/4 tsp ground ginger 
  • 1/2 tsp salt 
  • 1 8-oz can of pineapple chunks 


  1. Spray a large skillet with cooking spray and heat over high heat. 
  2. Sauté the onion and red pepper for 4-5 minutes, stirring occasionally. 
  3. Cut the chicken breasts into bite sized pieces and season with garlic powder, ground ginger, and salt. 
  4. Cook in the skillet with the onion and peppers for 7-8 minutes or until cooked all the way through. 
  5. Add the pineapple chunks and juice to the chicken and cook for 4-5 minutes then serve.
