Low Carb Easter Lamb with Zest Recipe: How to Make It

Ingredients (4 servings) 

  • 1 1/8 c (150 g) coconut flour 
  • 1 ¼ c (150 g) ground almonds 
  • 7/8 c (200 g) butter 
  • 2 c (50 g) sugar substitute, e.g. xylitol 
  • 1/2 c (100 ml) milk 
  • 5 eggs 
  • Zest of one lemon 
  • Zest of one orange 
  • 1 Tbsp. (1 pkg.) baking powder 
  • 1 vanilla bean 

Directions

  1. Slowly melt the butter on the stove over medium heat. Carefully remove the vanilla bean pulp with a knife. 
  2. Add all ingredients into a bowl and mix into a smooth batter. 
  3. Fill the Easter lamb baking pan with the batter and bake in the oven pre-heated to 355°F (180°C) for 40 minutes. Carefully remove from the baking pan and decorate or serve plain.
