Ingredients (4 servings)
- 8 eggs
- 3 1/3 c (100 g) spinach
- ¾ oz. (25 g) wild garlic
- Salt and pepper to taste
- Wash wild garlic and spinach and dry with paper towel or a salad spinner. Add into a blender.
- Beat the eggs and also add to the blender. Blend all ingredients at the highest speed for about 3 minutes until smooth. Add salt and pepper to taste.
- Heat a little oil in a pan and cook the scrambled eggs. Use a spatula to cut into bite size pieces.
- Serve on four plates and enjoy warm.
