Egg Muffins with Chicken Recipe: How to Make It

Ingredients (4 servings)

  • 8 eggs 
  • ¾ c (100 g) cooked chicken strips 
  • 3 ½ oz. (100 g) mozzarella 
  • 6 green onions 
  • Salt and pepper to taste 


  1. Slice the green onions and mozzarella. Dice the chicken strips. 
  2. Beat the eggs and whisk. Add the green onions and chicken strips and season with salt and pepper. 
  3. Divide the mixture into eight muffin tins and bake in the oven pre-heated to 350°F (180°C) for 20 minutes. 
  4. After ten minutes add one slice of mozzarella to each muffin tin. Bake another 10 minutes and serve warm.
