Ingredients (4 servings)
- 8 eggs
- ¾ c (100 g) cooked chicken strips
- 3 ½ oz. (100 g) mozzarella
- 6 green onions
- Salt and pepper to taste
- Slice the green onions and mozzarella. Dice the chicken strips.
- Beat the eggs and whisk. Add the green onions and chicken strips and season with salt and pepper.
- Divide the mixture into eight muffin tins and bake in the oven pre-heated to 350°F (180°C) for 20 minutes.
- After ten minutes add one slice of mozzarella to each muffin tin. Bake another 10 minutes and serve warm.
