Corned Beef Breakfast Skillet Recipe: How to Make It

Ingredients (4 servings) 

  • 14 oz. (400 g) corned beef 
  • 14 oz. (400 g) zucchini 
  • 4 eggs 
  • Salt and pepper to taste 

Directions

  1. Cut the corned beef and zucchini into 1/2 inch (1 cm) cubes. Braise in a hot pan with a little oil for about 10 minutes. Season to taste with salt and pepper. 
  2. Make four mounds in the pan and beat one egg in each. Allow to solidify at medium heat and season each egg with a little more salt and pepper. 
  3. Carefully move each portion onto a plate and serve warm.
