Coconut Muffins Recipe: How to Make It

Ingredients (4 servings) 

  • 1 1/2 c (200 g) coconut flour 
  • ¾ c (75 g) coconut flakes 
  • 2/3 c (150 g) butter 
  • 2 eggs 
  • 2 tsp baking powder 
  • Zest of one lime 

Directions

  1. Add all ingredients to a bowl and beat with a mixer until smooth. 
  2. Divide the batter into eight muffin tins and bake in the oven preheated to 350°F (175°C) for 25 minutes. The muffins are great warm or cold.
