Ingredients (4 servings)
- 2 1/3 c (300 g) coconut flour
- ¾ c (200 ml) buttermilk
- 3 eggs
- 1 vanilla bean
- 1 Tbsp. (1 pkg.) baking powder
- 1 tsp cinnamon
- Cut the vanilla bean in half and scrape out the pulp with a knife.
- Mix the vanilla pulp and remaining ingredients to make a smooth batter.
- Coat a pan with a little bit of oil or butter and cook the pancakes until both sides are golden brown, turning once.
