Buttermilk Cinnamon Pancakes Recipe: How to Make It

Ingredients (4 servings) 

  • 2 1/3 c (300 g) coconut flour 
  • ¾ c (200 ml) buttermilk 
  • 3 eggs 
  • 1 vanilla bean 
  • 1 Tbsp. (1 pkg.) baking powder 
  • 1 tsp cinnamon 

Directions

  1. Cut the vanilla bean in half and scrape out the pulp with a knife. 
  2. Mix the vanilla pulp and remaining ingredients to make a smooth batter. 
  3. Coat a pan with a little bit of oil or butter and cook the pancakes until both sides are golden brown, turning once.
