Blueberry Muffins Recipe: How to Make It

Ingredients (4 servings) 

  • 1 1/2 c (200 g) coconut flour 
  • 2 c (200 g) blueberries 
  • 7 Tbsp. (100 g) butter 
  • 1/2 c (125 ml) buttermilk 
  • 2 c (50 g) sugar substitute 
  • 2 eggs 
  • 1 vanilla bean 

Directions

  1. Carefully remove the pulp from the vanilla bean with a knife. Mix all ingredients except the blueberries into a batter. 
  2. Then use a spoon to carefully fold the blueberries into the batter. 
  3. Divide the batter into muffin tins and bake in the oven preheated to 350°F (175°C) for 25 minutes.
