Blueberry Breakfast Casserole Recipe: How to Make It

Ingredients (2 Servings)

  • 1 cup fresh blueberries 
  • 3 eggs, beaten 
  • 1/8 cup maple syrup 
  • 1/2 loaf bread, cut into 1-inch cubes 
  • 3/4 cup milk 
  • 4 oz cream cheese, cubed 
  • 2 tbsp butter 

Directions

  1. Preheat your oven to 350 degrees F and spray a loaf pan with non-stick cooking spray. 
  2. Place half of the cubed bread into the pan. 
  3. Evenly place the cream cheese cubes and blueberries on top of the bread cubes. 
  4. Add the other half of the cubed bread on top of the cream cheese and blueberries. 
  5. Combine the eggs, milk, maple syrup, and butter in a medium bowl. 
  6. Pour the egg mixture over the bread. 
  7. Cover with foil and bake for 30 minutes or until a toothpick inserted into the center comes out clean. 
  8. Cook for an additional 5 minutes, without the foil. 
  9. Serve warm.
